I have been loving the whole “pie in bar form” this summer. It really just does make sharing much easier! Not to say I won’t be venturing into the pie-in-a-pie-dish soon (especially so I can cross a couple things off of my list), but for parties with lots of people enjoying dessert: pie bars are the way to go! I originally whipped up this recipe for the party that I took my fluffernutter bars and key lime pie bars to, but I wasn’t completely sold on them. Don’t get me wrong, they were delicious, but they were a bit too sweet for my liking, and I thought they needed some sort of topping– not quite a streusel but not a crust either. Cheesecake Cookies (Re-do)

These Cheesecake Cookies are so creamy and tender. It’s a delicious cookie that’s not too sweet but totally addictive! Cheesecake Cookies are one of my favorite cookie recipes. They are so good! Back when I created them in 2014, I dipped them in chocolate which made them even tastier. This updated version I decided to skip the chocolate and instead give them a nice coating of powdered sugar. This particular recipe has been pinned over 1 MILLION times and has been the most popular cookie on my site since it’s creation. However some bakers have had trouble with the cookies, either thinking they were not sweet enough, that the batter was too sticky to work with or that they came out more like biscuits. I finally set some time aside a few weeks ago to work on the recipe, testing it for those exact things. I didn’t do much to tweak the recipe, other than adding a little bit more sugar. These no bake Oreo Truffles have a sweet outer chocolate shell that surrounds a decadent, chocolate Oreo filling- and only 4 ingredients needed! I am definitely not a baker by nature, so I appreciate any dessert recipe that has the words “no bake” in front of it. And as you can see by the crazy zig-zag lines on top of these truffles, I’m not very crafty either. So basically, if I can make these oreo truffles look pretty, you can make these look prettier. Easiest Pistachio Chocolate Baklava

Very excited to share this easy baklava today. Baklava is a Greek dessert pastry consisting of layered phyllo dough and chopped nuts that have been soaked in a sweet syrup to hold everything together and add amazing flavor. Traditionally this is a very rich and time consuming dessert to make. So I lightened it up and greatly reduced the amount of work, creating a baklava that’s a much more approachable, everyday kind of dessert. Oh, and it’s DELICIOUS too! The theme of the week has clearly been all things Mother’s Day and each recipe (with the exception of Wednesday’s salmon) has been one my mom would personally love.
