Blueberry Lemon Pie Bars

I have been loving the whole “pie in bar form” this summer. It really just does make sharing much easier! Not to say I won’t be venturing into the pie-in-a-pie-dish soon (especially so I can cross a couple things off of my list), but for parties with lots of people enjoying dessert: pie bars are the way to go! I originally whipped up this recipe for the party that I took my fluffernutter bars and key lime pie bars to, but I wasn’t completely sold on them. Don’t get me wrong, they were delicious, but they were a bit too sweet for my liking, and I thought they needed some sort of topping– not quite a streusel but not a crust either. COCONUT FLOUR LEMON CAKE (GLUTEN FREE)

  I’m totally in LOVE with this cake.  It’s light, springy, perfectly sweet, hinted with lemon flavor, and smothered in curd and cream. Absolutely DELICIOUS!   Yield: 2 nine inch cakes   INGREDIENTS FOR LEMON CAKE LAYERS 1 cup coconut flour (I use THIS Brand) 1 tsp baking soda 1/2 tsp salt 6 eggs, room temperature 6 tbsp full fat coconut milk (I use THIS brand) 6 tbsp lemon juice 1 cup butter, ghee, or coconut oil, melted 2/3 cup maple syrup or honey 1 tsp vanilla extract zest from 4 lemons 4 egg whites, room temperature   FOR TOPPINGS one batch lemon curd (get recipe here) 1 pint heavy whipping cream or coconut cream from 3 cans of chilled full fat coconut milk 1-2 tablespoons of maple syrup or honey, if desired berrie s     INSTRUCTIONS For full instructions you can go to savorylotus.com .

GARLIC BUTTER BAKED SALMON IN FOIL

  Baked salmon in foil that’s been brushed with my lemon garlic butter sauce. This recipe is so easy to make and pulls together in less than 30 minutes! The salmon is so flakey and tender when baked inside foil. CRISPY POTATO CURRY [VEGAN + GLUTEN FREE]

  Creamy, silky, flavor packed curry. There really isn’t much that can beat a really delicious curry.
